Smoked Turkey Sausage & Roasted Veggies

Equipment

  • Non-stick Baking Sheet Pan (rectangular)

Materials

  • 13 oz hardwood smoked turkey sausage
  • 1 lb. cubed sweet potatoes Whole sweet potatoes can be used but using the pre-cut cubed sweet potatoes will save you some time.
  • 1 lb. brussel sprouts
  • 2 tbsp extra virgin olive oil
  • 1 tsp sea salt Add to taste
  • 2 tsp black pepper Add to taste

Instructions

  • Pre-heat oven to 400F.
  • Slice smoked turkey sausage into 1'' rounds.
  • Slice brussel sprouts in half (optional).
  • Drizzle 1 tablespoon of olive oil evenly onto sheet pan.
  • Add smoked sausage slices, brussel sprouts and sweet potato cubes onto sheet pan and sprinkle with with salt and pepper.
  • Drizzle remaining tablespoon of olive oil on veggies and sausage. Then toss with your hands, until fully coated with olive oil and evenly mixed across pan.
  • Bake for 35 minutes, stirring with cooking spoon throughout.
  • Enjoy as is or served over kale, brown rice or quinoa!

Notes

Amazon Fresh, Harris Teeter and other grocers offer fresh pre-cut cube sweet potatoes.  If using whole sweet potatoes, cut into 1/2" cubes.
