Non-stick Baking Sheet Pan (rectangular)
Materials
13ozhardwood smoked turkey sausage
1lb.cubed sweet potatoes Whole sweet potatoes can be used but using the pre-cut cubed sweet potatoes will save you some time.
1lb. brussel sprouts
2tbspextra virgin olive oil
1tspsea saltAdd to taste
2 tsp black pepperAdd to taste
Instructions
Pre-heat oven to 400F.
Slice smoked turkey sausage into 1'' rounds.
Slice brussel sprouts in half (optional).
Drizzle 1 tablespoon of olive oil evenly onto sheet pan.
Add smoked sausage slices, brussel sprouts and sweet potato cubes onto sheet pan and sprinkle with with salt and pepper.
Drizzle remaining tablespoon of olive oil on veggies and sausage. Then toss with your hands, until fully coated with olive oil and evenly mixed across pan.
Bake for 35 minutes, stirring with cooking spoon throughout.
Enjoy as is or served over kale, brown rice or quinoa!

Notes
Amazon Fresh, Harris Teeter and other grocers offer fresh pre-cut cube sweet potatoes. If using whole sweet potatoes, cut into 1/2" cubes.
