Today, I’m sharing another one of my favorite comfort foods to enjoy during this time of year.  Who doesn’t love a warm bowl of soup on a cool fall night?  Let me know – I most certainly need to have a talk with them.  Lol!  In this installment, we are diving into a homemade “Creamy Tomato Soup” and it is one for the books ya’ll.  Serve with a grilled cheese sandwich or your favorite side salad, and kick back to your favorite movie.  A fall season WIN WIN! 

Let’s get into it …

Creamy Tomato Soup

A quick and hassle-free take on this popular fall comfort food.

Cook Time 20 minutes
Total Time 35 minutes
Servings 4

Ingredients
  

  • 7 cups canned whole tomatoes Equivalent to two (2) 28oz cans.
  • 2 tbsp butter Unsalted is recommended, as salt will be added separately.
  • 2 tbsp extra-virgin olive oil
  • 1 cup diced onions
  • 1 tbsp parsley (fresh or dried flakes)
  • 2 tbsp minced garlic
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper
  • 1/4 tsp rosemary
  • 1/4 tsp red pepper
  • 1/4 tsp oregano
  • 1/4 tsp celery seed
  • 3/4 cup heavy cream
  • 1 cup water
  • 3/4 tbsp sugar

Instructions
 

  • Melt 2 tablespoons of butter and 2 tablespoons of extra virgin olive oil in a sauce pan.
  • Add diced garlic, diced onions and parsley to saucepan and cook over medium heat while stirring for about 5 minutes (until onions and garlic begin to carmelize).
  • Add canned tomatoes (including juice from the tomatoes) and allow to cook down for 5 minutes.
  • Stir in water and heavy cream, adding rosemary, celery seed, oregano, red pepper, salt, pepper and sugar. Stir through to blend ingredients.
  • Bring the tomato soup mixture to a boil over high heat, stirring to ensure that tomatoes have cooked down thoroughly.
  • Reduce to low heat, cover and simmer for 10 minutes.  Then remove from heat.
  • Optional: Pour soup into large mixing bowl and using a hand mixer, blend until any remaining tomatoes are fully pureed. Return to saucepan and warm (if needed).
  • Pour, spoon or ladle tomato soup servings into bowls.
  • Optional: Garnish with parsley and top with croutons. Serve with a grilled cheese sandwich or your favorite side salad.
